Since 1906, students of the Collège St-Michel have organised their patron saint's visit. At nightfall, St Nicholas leaves the Collège on his donkey Babalou, greeting and blessing the crowd and handing out biscômes — spiced gingerbread — all along the route. His retinue has some unexpected roles: a donkey driver, a cantor, a crozier bearer — and a butcher. With them come the pères fouettards, the St-Michel, Marmousets and Enchanteurs choirs, the fifes and the Collège band.

The route is short and steep, like the old town: Rue du Collège St-Michel, Rue de Romont, Rue de Lausanne, Rue du Pont-Muré, a halt in front of the cathedral. Then comes the moment the city waits for: from the terrace, the saint addresses the «children» of Fribourg in a speech inspired by the events of the past year — in French and in German. A giant screen on Place de l'Hôtel-de-Ville and La Télé show it live.

Nicholas of Myra, a 4th-century bishop, is patron of children and sailors — and of the city and canton of Fribourg. So this isn't one custom among many but a city festival, with a market of sweets and crafts.
